I really wanted to share a delicious, nutritious recipe with you that is perfect for the summery weather that we’re finally getting where I live!
We’re in the middle of Sagittarius season – even if it’s not currently summer for you – and that means that asparagus should be on the menu! Sagittarians need to eat lots of grains, greens and grasses, as do we all to synchronise our energy with that of this season.
This recipe is from the wonderful Jamie Oliver. Depending on how fast you move in the kitchen (which is a very Sagi thing to do!) you might like to do steps 3 & 4 first so that you can serve the salad warm.
Ingredients
450 g asparagus
250 g halloumi
1 bulb of fennel
1 red onion
2 tablespoons extra virgin olive oil
½ an orange
Method
1. In a large pan of boiling salted water, boil the asparagus until tender (no more than 5 minutes), then refresh in cold water.
2. Preheat a frying pan over a high heat. Slice and add the halloumi, then cook until charred, turning occasionally.
3. Meanwhile, trim and finely slice the fennel, then peel and finely slice the onion. Place into a bowl with the asparagus and halloumi.
4. Combine the oil with the orange zest and juice, then season well with sea salt and black pepper.
5. Pour the dressing over the other ingredients, toss well and serve on a platter while the halloumi is still warm.
Enjoy!
