This is an Aries Season recipe. When carrots get past their ‘best by’ date they are still great for making cake with!
Carrot cake is one of my favourite treats that seem kinda healthy! Extra veggies anyone?! But seriously carrot is one of the cooling foods recommended for firey Aries peeps and for all of us during this action oriented season of the Wheel of the Year!
This is an ancient recipe that my mum used to make!
Ingredients
3/4 cup rapadura or coconut sugar
125 g butter
1 cup flour (of choice, just remember if you go GF you’ll probably need a little more because there’s no liquid to reduce in this recipe)
1 tsp baking powder
1/4 tsp salt
1 tsp bicarb soda
1/2 tsp cinnamon
2 eggs
1 1/2 (firmly packed) cups grated carrot
2 tbs finely mixed peel
1/3 cup chopped pecans
1/3 cup sultanas
Icing
125 g cream cheese (room temperature)
45 g unsalted butter (room temperature)
1/2 tsp vanilla
Grated rind of 1 lemon
1 tbs lemon juice
1 cup icing sugar
Method
1. Preheat your oven at 180 degrees or 160 fan forced.
2. Grease your baking tin (around 23cm size) and line the base with some unbleached baking paper
3.. Cream butter and sugar until light and fluffy.
4. Sift flour, baking powder, salt, bicarb and cinnamon into the creamed butter and sugar.
5. Add all other ingredients and mix well.
6. Place mixture into cake tin and bake for 35 minutes or so until firm to touch.
7. Leave to cool in tin for 15 minutes and then cool completely on a rack.
8. Meanwhile mix all icing ingredients together until very creamy and spread generously on top of the cake. You can of course double everything and make a cake like in the picture!
9. Share and enjoy!
