
Who doesn’t want to sneak more veggies into the household diet? You? Ok well don’t try this perfect lockdown chocolate cake then!
It’s a fabulous recipe from The Clever Gut Diet Cookbook by Dr Claire Bailey (aka wife of Dr Michael Moseley).
Chocolate Eggplant Cake with Pear & Walnuts
-1 medium eggplant/ aubergine, diced
-150g dark chocolate, chopped
-60g coconut oil (or you could use olive or macadamia)
-60g dates, chopped
-3 eggs, beaten
-1 tsp baking powder
-50g ground almonds (or you could use hazelnut or even flaxseed meal)
-80g walnuts, chopped (pecans or macadamias would also be fine)
-1.5 pears, cubed
-Preheat the oven to 180 (160 fan forced)
-Grease & line a cake tin (approx 15 cm round or square)
-Steam eggplant for 15mins until soft
-Place hot eggplant in a bowl with the chocolate and oil and stir until melted
-Add dates and blitz with a blender until smooth
-Add everything else except pears and walnuts and blitz again
-Gently stir in pears and walnuts
-Spoon into cake tin and bake for 35-40 mins until a knife comes out clean from the centre
-Cool in pan for 10 mins, then on a wire rack
-Eat and feel great!
