Orange Polenta Cake Recipe

Orange Polenta cake

Let’s have a bit of sweetness to lighten up the serious mood of Virgo season!

Two foods that are great for Virgo energy are citrus fruits and almonds. Years ago I collected this recipe from Super Food Ideas magazine and I still love it as much as I did the first time I made it.

Orange Polenta Cake with Honey Syrup

-1.5 cups self raising flour

-1/2 cup rapadura or coconut sugar

-1/2 cup almond meal

-1/2 cup polenta (preferably organic)

2 tsp orange rind, finely grated

-1/3 cup orange juice

-2 eggs (free range), lightly beaten

-2 tbs honey

-1/2 cup olive oil (Cobden Estate is the best!) *if you’re using GF flour you’ll need less oil

1/2 cup flaked almonds

-Syrup

1/4 cup honey

1/2 cup orange juice

-Preheat oven to 180/ 160 fan. Grease and line a lamington pan (with unbleached, compostable baking paper), allowing baking paper to hang over the sides of the pan.

-Combine flour, sugar, almond meal and polenta in a bowl.

-Add orange rind, orange juice, egg, honey and oil to the bowl and mix to combine

Spoon mixture into pan and smooth the top. Sprinkle with flaked almonds.

-Bake for 20 mins or until a skewer comes out clean.

-Make the syrup by placing the honey and orange juice in a small saucepan with 1/4 cup water, stir until combined, and heated through.

-Pour half the syrup over the hot cake, retaining the rest to use to serve.

-Serve with extra syrup and cream or ice-cream. Yum!
